Cauliflower – High In Fiber & Vitamin C

Cauliflower is a vegetable that is part of the species brassica oleracea which also includes cabbage, kale, brussels sprouts and broccoli. Cauliflower comes in three different bright colors which are green, orange and purple. Their bright colors are clues that tells us they are full of antioxidants and nutrients. Cauliflower is high in fiber, vitamin C and low in calories. Fiber is important for regulating the absorption of nutrients and bowel movements. Fiber also help regulate blood sugar levels by slowing down the digesting process and is known to lower cholesterol levels. Because cauliflower is low in calories and high in fiber, it is great for weight management. Vitamin C is important for synthesizing carnitine, a molecule that transport fats to the mitochondria of cells for converting them to energy. Vitamin C is well known for keeping the wrinkles away because it is a highly effective antioxidant and keeps collagen tissues strong.
When cooking cauliflowers, try to cook them rapidly by steaming or using a pressure cooker. If you have to cook them in water, put the cauliflowers into the cooking pan after the water boils and cover them with a lid. The purpose of these techniques is to preserve as much nutrients as possible. Overcooked cauliflower taste mushy and does not smell very pleasant. Cauliflowers can also be eaten raw, make sure you wash them well to reduce the chance of getting sick from microorganisms.
