Swiss Chard Benefits (the Rainbow Vegetable)

Swiss chard is part of the beet family. It is very high in vitamin A and K. Vitamin A is very beneficial for your eyes because your body can use it to create retinoids. A very important retinoid is retinol, a chemical compound well known for increasing the effects of the visual pigment, rhodopsin. Rhodopsin is very important for night vision because it helps rod cells to absorb light better. Vitamin K is important for blood clotting, cell growth and may help with bone development. One cup of fresh swiss chard can contain over 300 percent of the daily value of vitamin K. Swiss chard is also high in vitamin C, magnesium, manganese and potassium, and is a good source of iron, vitamin E, dietary fiber and copper.
The leaf color of swiss chard is usually green but its stem comes in many different colors. This is why some people like to call it the rainbow vegetable. The flavor of swiss chard is somewhat similar to beets and spinach. The main flavors can be described as lightly bitter and slightly salty. If you are planning to cut down on your calories, swiss chard can be your best friend. One cup of fresh swiss chard can have as low as 35 calories.
