Apricot looks similar to plums and peaches but has a beautiful golden-orange color. This golden fruit is rich in vitamin C and iron. Vitamin C is an antioxidant that helps your body to absorb iron better. Iron is important for boosting the levels of oxygen in your body because it helps red blood cells to carry more oxygen. More oxygen means that your cells can perform better because they have more fuel to burn for energy. It is important to know that canned or dried apricots don’t have as much vitamin C as fresh apricots.
Apricot taste similar to plum and peach, it is sweet, not too juicy and smooth in texture. This sweet fruit is also filled with beta-carotene and lycopene which are important for keeping LDL cholesterol from oxidizing. Because of its high levels of antioxidants, apricot is well known for its ability to help prevent certain cancers, especially lung and pancreas cancer. Apricot is also well known for promoting good vision because of its high levels of vitamin A. The kernel of apricot looks unappetizing but is rich in protein and vitamin B17 (laetrile). Early civilization like to use the kernel and its oil for healing wounds, relieving muscle pains and expelling worms. If you like to eat dried apricots instead of fresh apricots, please be aware that some people have been known to have allergic reactions to the sulfite preservatives.
